Ingredients

3.5 Cups ww flour
1/3 cup wheat gluten
1 Tbsp plus 1 tsp yeast
2.5 Cups hot tap water
1 T salt
1/3 Cup oil
1/3 C honey
1 Tbsp plus 1 tsp lemon juice
2.5 more cups of ww flour
Directions
Mix first 3 ingredients with dough hook. Add hot water. Mix for one minute. Cover and let rest 10 minutes.
Add remaining ingredients. Mix thoroughly until dough leaves side of bowl.
Turn oven on for one minute, then turn it off.
Meanwhile, dump dough onto oiled counter and shape into two loaves. Place loaves into pans.
Let dough rise in warm oven for 20 minutes. Turn oven to 350 and bake for 30 minutes.
Makes 32 slices.
