Introduction

Ingredients

    1 15oz can of cannellini beans or any white bean
    1 clove of garlic
    1/4 cup of extra virgin olive oil
    zest of half a lemon
    juice of 1 lemon
    a big handful of flat leaf parsley about 1/4 cup
    salt to taste

Directions

Drain the can of beans and pour into a food processor. Zest half of a lemon onto the beans. Squeeze lemon juice into the food processor. Grate the clove of garlic into the beans. Roughly chop the parsley and add it to the food processor. Turn the processor on and let it start blending. Stream the olive oil in until you have a thick creamy consistency like hummus. Add salt to taste and blend quickly to combine. The flavor will develop even more if it is allowed to sit in the refrigerator for a while. I always bring it to room temperature to serve. A serving is about 1/4 cup.
