Ingredients

1 C. all-purpose flour
1/2 C. whole wheat flour
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
4 medium bananas, mashed
1/2 C. white sugar
3 packets Splenda
1 large egg
3 tbsp. margarine, melted
2 1/3 tbsp. butter, melted
Directions
1. Preheat oven to 350 degrees F (175 degrees C). Coat muffin pans with non-stick cooking spray , or use paper liners. Sift together the flour, baking powder, baking soda, and salt; set aside.
2. Combine bananas, sugar, egg, and melted margarine/butter in a large bowl. Fold in flour mixture, and mix until smooth. Scoop into muffin pans. Use about 1/4 cup batter per muffin to make 12 muffins.
3. Bake in preheated oven. Bake for 25-30 minutes. Muffins will spring back when lightly tapped.
Makes 12 muffins.
