Ingredients

    1 lb tofu, cubed
    1/4 C lemon juice
    6 Tbs water
    2 Tbs honey
    1/4 C tamari sauce (soy sauce)
    1/4 C tomato paste
    1 tsp minced ginger
    2 tsp peanut oil
    4 cloves of garlic, crushed
    1 C toasted cashews
    1/2 tsp salt
    black pepper (a dash)
    1 lb. mushrooms, quartered
    1 red pepper, sliced in strips
    1 green pepper, sliced in strips
    8 scallions, minced
    2 cups of brown rice (cooked in 3 C of water)

Directions

Serves 5

Combine lemon juice, tamari sauce, water, tomato paste, honey, ginger, garlic, and pepper in a bowl. Add tofu, stir gently and marinate for several hours (over night or all day works too).

Ten minutes before serving time, set up your wok (or skillet) and let it heat up for a few minutes. Add oil and stir fy your peppers, scallions and mushrooms over high heat. Add the salt, and the marinated tofu (add the marinate sauce too). Lower your heat after adding tofu and stir fry for a few more minutes (until all of it becomes hot and bubbly). 10 minutes total stir fry time. Remove from heat and stir in the cashews. Serve it over the brown rice.
