Ingredients

    1c Israeli Couscous
    1 can chickpeas (15oz)
    2t olive oil
    1 carrot chopped or grated
    1 bell pepper chopped
    1 bunch scallions, chopped
    1 or 2 cloves garlic, pressed
    2 diced zucchini
    2 small diced tomatoes
    1t salt
    1/2t cayenne
    1/2t cinnamon
    2T fresh chopped parsley
    2t cumin powder
    1T curry powder

Directions

Add carrot, bell pepper, zucchini, tomatoes, garlic & scallions to olive oil in a large skillet, sautee 5 minutes or until desired consistency.

boil 1c water in a saucepan. remove from heat and add couscous and all remaining ingredients. cover & let sit for 5 minutes or until couscous is tender.

Mix all ingredients and enjoy! Makes about 12 one cup servings, tasty hot or cold.
