Ingredients

    2 cups oatmeal
    1.5 tsp baking powder
    .5 tsp salt
    1 cup nonfat milk
    2 eggs
    .25 cup brown sugar
    1 cup blueberries, I use frozen
    1 tsp lemon zest, optional
    1 tsp vanilla

Directions

Makes 6 servings

Mix everything but the blueberries in a large bowl. Fold in blueberries carefully, leave them frozen if they are still frozen.

Preheat oven to 350°, Pam a square pan, round cake pan, or pie plate.

Spread in batter. Bake for about 35 minutes.

Eat hot, warm, or cold. My favorite, warm with a bit of maple syrup.
