Introduction

Ingredients

    2 trout filets (divide into 3 oz pieces)
    3/4 teaspoon course salt (recommend sea salt)
    Freshly ground pepper
    1 Tbsp olive oil (recommend EVOO)
    3 oz whole shelled almonds, coursely chopped
    1 cup loosely packed flat leaf parsley leaves, coursely chopped
    Finely grated zest plus freshly squeezed juice of 1 lemons
    Nonstick cooking spray

Directions

Serves 4 ( 3oz piece filet)

Lightly coat a large skillet with cooking spray. Place over medium-high heat. Season the trout with salt and pepper; gently place 2 to 4 pieces, do not crowd, inskillet with skin side UP. Reduce heat to medium and cook until underside are golden brown, 4 to 5 minutes. CAREFULLY flip fish, using two spatulas if necessary. Cook until fish is slightly flakey in the centerwhen poked with a fork, about 2 minutes more. Transfer to platter (use 2 spatulas as needed), Keep warm. Wipe out skillet and repete with remaining filet pieces.

Wipe out skillet; add olive oil and almonds. Cook over medium heat, stirring until almonds start to turn golden, about 1 minute. REMOVE from heat and immediately add parsley and lemon zest; stir to combine. Stir in lemon juice; as soon as it starts to bubble, pour sauce over fish. Serve immediately.
