Introduction

Ingredients

2 cups cooked lentils
2 cups cooked brown rice
2 cups plain, low fat yogurt
2 tsp minced garlic
1/2 cup chopped green pepper
1/2 cup chopped onion
1 cup frozen corn
1 tbsp olive oil
Seasonings such as ground cumin, pepper, oregano, cayenne pepper, what ever you like!
Directions
***Prep time includes cooking time for brown rice & lentils. Will take much less time if you already have these prepared!***
Saute the veggies and garlic in the olive oil for about 5 minutes, or until soft.
Mix the rice, lentils and yogurt. Stir in the veggies and any additional seasonings.
Transfer to a casserole dish, top with shredded cheese if desired (not included in nutritional info). Bake at 375F for about 30 minutes.
Makes about 6 1-cup servings.
