This is really a tasty meal and seasoning can be adjusted to fit your culinary tastes or ethnic preferences. You can put it over brown rice or noodles if you wish or add more broth to increase liquid and serve with some whole grain garlic bread. This meal is low in fat and cholesterol and rich in potassium, dietary fiber, protein, calcium, iron, Vitamins A - B6 - and C as well as a number of other nutrients. I rinse the beans well and use home made beef stock to reduce the sodium level as this recipe is naturally high in sodium. Ingredients

1.25 lbs Beef Stew Meat USDA Choice
1 large onion cut in wedges
1 large red pepper chopped into larger pieces
1 large yellow pepper chopped into larger pieces
6 small carrots or 3 large carrots chopped
4 cloves garlic minced
2 cups fresh green beans, chopped
1 can (15 oz) organic black beans, rinsed and drained
2 cups escarole, chopped
1 can 28 oz whole, peeled tomatoes
Italian or other ethnic seasoning to taste
Directions
Place onions, red and yellow peppers, carrots, green beans in bottom of crock pot. Add black beans and top with escarole. Place stew meat on top and sprinkle with seasonings. Pour tomatoes and beef stock over top. Cover and cook on high for about 4 hours or on low for about 8 hours until meat is done.
Serves 5 (4 oz meat)
Variation: For a hearty stew, add potatoes and increase liquid.
Serve over brown rice, quinoa, or noodles or eat as a stew with toasted whole grain garlic bread.
