Introduction

Cuban but healthy!!!! Excellent with Plaintains that have been split in half lengthways, sprayed with Cooking Oil Spray (both sides) and baked for 20 mins at 400 degrees Cuban but healthy!!!! Ingredients

    2 pounds ground turkey (93% lean)
    1 tbsp olive oil
    1 1/2 c sliced onions
    1 clove minced garlic
    1 1/2 c Red Pepper, sliced
    1 1/2 c Yellow Pepper, sliced
    1 cup finely chopped carrot
    3/4 c golden raisins
    1/2 c white wine (dry)
    1/4 cup sliced pimento stuffed green olives (about 10)
    2 tbsps balsamic vinegar
    2 bay leaves
    1 14.5 oz can of stewed tomatoes
    1 8oz can tomato sauce

Directions

1 Brown Turkey, Drain
2 Add oil. Saute onion and garlic 3 min. Add peppers and carrot. Saute 3 mins. Return Turkey to pan. Stir in raisins and remaining ingredients. Bring to boil. Reduce heat and simmer 15 mins. stir occasionally. Discard bay leaves.
Yield 8 servings/1 cup each

    Very Good
    Yummy piccadillo. Not the best I've ever had, but for homemade, it is excellent. I did change a couple of things because it was what I had. I put in more peppers than what was called for, twice as many olives, omitted the raisins and white wine, and added chicken broth. Thanks so much for sharing. - 11/1/12
