Ingredients

    4 small zucchini (7 in long) halved lengthwise
    2 tsp olive oil
    3 cloves garlic, minced
    3/4 cup chopped onion
    3/4 cup crumbled low-fat feta cheese
    1/4 cup shredded low-fat Swiss cheese
    1.5 T whole wheat flour
    1 egg, lightly beaten
    2 egg whites, lightly beaten
    2 T chopped fresh parsley
    1/4 tsp black pepper

Directions

1. Scoop out zucchini flesh, leaving about 1/2 inch shell. Place shells in 13x9 sprayed with nonstick spray & set aside.
2. Preheat oven to 375. Heat oil over medium heat.
3. Chop zucchini flesh and saute in oil with garlic and onion until soft, about 5 minutes. Remove from heat
4. In medium bowl, combine remaining ingredients and mix well. Add zucchini mixture and toss to combine.
5. Spoon into zucchini shells and bake until heated through, about 30 minutes. Serve immediately.
