This is a delicious, simple lunch that's easy to prepare and sure to please. It can be made in the morning and put in a tupperware until lunch, and it's just as delicious. Ingredients

    -1 ripe avocado, halved and pitted
    -1/2 can black-eye peas (I use Goya's 15.5-oz cans), drained and rinsed
    -3.5 oz. cherry tomatoes, halved
    -1 scallion or green onion, sliced finely
    -1 tbsp. fresh basil, chopped finely
    -1/2 tbsp. cider vinegar
    -Lemon wedges

Directions

-Halve and pit the avocados, keeping them in their skin, and place one each on two plates.
-Squeeze the lemon wedges over the avocado halves, sprinkling them with the juice.
-In a bowl, mix the black-eye peas, cherry tomatoes, scallion, basil and cider vinegar.
-Scoop the mixture evenly into the two avocado halfs.
-Enjoy!
