Ingredients

    3/4 C Coconut Flour
    5 Tbs Cocoa powder
    1 T fine ground coffee
    1/2 C Coconut Crystals
    1/4 C Xylitol
    pinch salt
    1/2 tsp baking powder
    1/4 tsp baking soda
    1/4 coconut oil (melted on low temp)
    1/4 milk w/1 tsp vinegar or butter milk
    1 tsp vanilla extract
    1/2 c beets, canned, drained
    4 lg eggs
    3/4 C coconut milk (possibly more) the kind when you shake can it sounds thick.

Directions

Combine eggs, drained beets, buttermilk, vanilla, coconut oil, coconut milk in blender till smoothe.
Combine dry ingredients, gentle mix by hand dry ingredients into wet ingredients.

Bake @ 350 for 35-50 minutes. Giggle pan, cake is done when barely moves in center. Do not over bake.

For topping: in double boiler melt 1/2 c 60% cocoa chocolate bar or chips. Add 1 T coconut milk and 1 T coffee. When cake is completely cool, spread topping and enjoy!
