Introduction

Took a few recipes and made one of my own! Took a few recipes and made one of my own!

Ingredients

    2 bags of shelled edamame
    white wine vinegar (about 2.5 Tbs.)
    extra virgin olive oil (about 2.5 Tbs.)
    rice vinegar (1 Tbs.)
    1 red pepper
    5 bits of sun dried tomato
    2 pieces of artichoke heart
    2 cloves of garlic
    1 medium cucumber
    reduced fat crumbled feta cheese (about 1/2 container, or 2 oz.)
    fresh chives
    salt to taste
    onion powder to taste

Directions

estimated serving size: 14

prepare oil, vinegar, chives, sun dried tomato and artichoke hearts and let sit. (chop up what is needed.) mince the 2 cloves of garlic and add to the mixture.

prepare edamame (i buy frozen, so i just microwaved it)

chop up pepper and cucumber and hand add to edamame in a larger bowl.

mix the oil/vinegar into the salad. add the feta and mix.

add salt and onion powder to taste. :-)


more of a mellow tasting edamame salad--on the lighter side.
