Introduction

Very simple, classic, and CHEAP side dish! I like that the vinegar flavor does not stand out, but it keeps the dish fresh for a long time! Very simple, classic, and CHEAP side dish! I like that the vinegar flavor does not stand out, but it keeps the dish fresh for a long time!

Ingredients

    2 Cans Yellow Corn, drained
    2 Can White Corn, drained
    1 Can Dark Red Kidney Beans, drained and rinsed
    1/4 chopped EACH red and green pepper
    About 3 Chives, chopped finely
    1/2 cup White Vinegar
    1/2 cup Canola Oil
    1/2 cup Sugar

Directions

Get a LARGE bowl, and simply add and thoroughly mix all ingredients. You can serve right away, but I like to let it sit in the refrigerator for at least 30 minutes.

Makes about 24 1/2 cup servings.
