Introduction
I make this into muffins. The orginal recipe was given to me by a Hospital Nutritionist. I tweeked the "fat" and substituted orginal1 1/2 c. cooking oil with applesauce & buttermilk and 2 T oil. This recipe also makes nice "loaves" of bread or bundt "bread"-

Ingredients

3 c. flour
2 cups sugar
1 t. salt
1 t. cinnamon
1 t. soda
2T. vegetable oil
3/4 c. applesauce
3/4 c. buttermilk
3 well beaten eggs
8 oz. crushed pineapple
2 c. (diced) bananas (ripe!)
1 c. chopped bananas
1 T. brown sugar
Directions
This makes 36 regular size muffins. Sometimes, I use 2 regular muffin pans and then 1-24 mini muffin pan.
