Introduction

Each tamale has 3 Weight Watcher Points.
I prepare my turkey by boiling it in seasoned water, salt pepper celery carrot onion.(save the broth) cool and shred the turkey when cool.

Ingredients

    2 cups Instant corn masa mix for tamales
    2 cup lukewarm Turkey Broth,
    1 tsp Baking Powder,
    1/2 tsp Salt
    1/3 C Olive Oil
    2 C. Turkey breast meat
    About 8 Pisilla Chile Peppers or California pods or to taste.
    3 cloves garlic
    Water, tap, 1 cup (or more as needed)
    *Canola Oil, 1 tbsp
    Salt, .5 tbsp
    Pepper to taste

Directions

Cover Turkey with water and bring to a boil. Reduce heat and simmer until done about 2 hours. Lightly saute clean chili pods (removing stems and seeds) in cooking oil, in a large pan. Place in a blender with the garlic, hot turkey broth and salt and pepper. until smooth. Shred the turkey into small pieces, add to the large frying pan. and cook about 7 minutes.
Soak corn husks for a few minutes and rinse well. Spread masa evenly over corn husks, place a tablespoon of meat mixture in the center. Fold all sides to the center, place in steamer. Cover with a wet cloth and steam, approx, 1 hour.
Makes 16 tamales.

    Very Good
    I wanted some lard-free tamales. I forgot the baking powder but they were still pretty good. Those of us that like a little heat ate with Salsa Verde. I also substituted pork loin for turkey. Next time I will try turkey or chicken and remember the baking powder. - 3/10/15
