Ingredients

2 Tbs. Olive oil
1/2 Cup diced onion
1/2 Cup diced bell pepper ( I like red)
2-3 Garlic cloves crushed
1 Tbs. oregano
1/2 tsp cumin
dash red pepper
Parsley or Cilantro for color
1-2 Cups of water (depending how "soupy" you like it)
2 Cups of cooked beans(I use black or small kidney)
4 Cups cooked rice
Directions
Have your beans and rice cooked before-hand.
In a skillet, saute onion, bell pepper, garlic. Then add water, beans, oregano, cumin, red pepper, parsley. Let mixture simmer for a few minuets.
Makes about 5 3/4 cup of beans. Serve over about 3/4 cup of rice. I like to mix the beans in with my rice, or you can serve it over the top.
