Ingredients

    4 cups of romaine lettuce - chopped
    1 tomato - cubed *optional
    1/2 cup of mushrooms - cubed *optional
    1/2 cup of croutons
    4 strips of bacon - cooked
    3-4 tbsp of grated parmesan cheese
    2 large chicken breasts - boneless/skinless
    lemon pepper
    2-3 tbsp of creamy caesar dressing

Directions

This can be substantial enough as a meal for 2, or can make a side salad for 4.

First, cut about four cups of lettuce ( you can dice a few tomatoes and mushrooms as well if you're adventurous!)

Next, fry the 4 strips of bacon until crispy and crunch them up to make bacon-bits.

Add the bacon bits and croutons to your lettuce, mixing in the grated Parmesan cheese and 2-3 tbsp of Creamy Caesar dressing (I like Newman's own or Kraft).

Finally, grill your chicken breasts with a generous amount of lemon pepper seasoning and a dash of fresh lemon juice if you like a little extra kick.

Top off your salad with the sliced chicken and, voila!!
