Ingredients



    * Zucchini, 2 cups, grated
    * Carrots, 1 cup, grated
    * Cheddar Cheese, 1 cup, grated
    * 3 Eggs, beaten
    * Canola Oil, 1/4 cup
    * Heart Smart Bisquick, 1 cup

Directions

Preheat oven to 350 degrees.

Use 1 tsp canola oil to coat baking dish.

Prepare and mix all other ingredients.

Transfer to baking dish and bake at 350 degrees
for 40 minutes.

    Good
    I used a square 8" pan. When I added the batter, it was only about an inch or two high in the pan, and I was not sure if I was overbaking it. It turned out it was not burnt at all, but it stuck to the nonstick pan. It is tasty. The consistency is a little mushy, but that does not bother me! - 7/1/10
