Ingredients

1 lb. lean beef, ground
1 lb. hot Italian sausage
1 lb skinless, boneless chicken breast
3 cups Italian bread crumbs
3 large eggs
3 stalks celery
1 medium Vidalia onion
2 large cloves of fresh garlic
Italian seasonings and garlic sea salt
Directions
Yields 72 meatballs.
Grind your lean cut of beef in a Cuisenart or other meat grinding appliances. Place in a large bowl. Grind your chicken breast finely and add to the beef. Finally add the hot sausage, 3 cups of bread crumbs, finely minced onion, garlic and celery. Mix thoroughly and then add the 3 eggs, salt (aprox. 1 tsp.) and Italian seasoning (about a tablespoon). Mix with your hands until well blended. Roll into 1 1/4 inch balls and place on an oiled cookie sheet (one with sides). Bake in a 350 degree oven for about 20 minutes. Time will vary with different ovens and different sizes of meatballs. Should make about 6 dozen.
