Super-fast, delicous one-dish meal from your pantry for those nights when dinner sneaks up on you and you have no idea what to cook! Super-fast, delicous one-dish meal from your pantry for those nights when dinner sneaks up on you and you have no idea what to cook!
Number of Servings: 4

Ingredients

    8 ounces pasta (4 ounces dry, cooked and drained)
    1 can tomatoes, diced or chopped
    1 can garbanzo beans, or 2 cups, rinsed and drained
    2 tbsp fresh basil, torn, or 1 Tbsp dried (to taste)
    2 Tbsp extra virgin olive oil.

Directions

Cook pasta according to package instructions, drain, but do not rinse. Return to pan, and toss with olive oil and basil, then add tomatoes and garbanzo beans. Heat through on low-medium heat, transfer to serving dish, and dinner is ready! Makes 4 approx. 1.5 cup servings. Recipe is easily doubled, and leftovers are even better the next day.

Serve with a green salad and/or garlic bread. This can be made with fresh tomatoes, as well, but I keep all ingredients on hand in the pantry for a quick throw-together meal that the whole family enjoys.
