My version, with fresh raw jicama for a bit of crunch. My version, with fresh raw jicama for a bit of crunch.
Number of Servings: 8


    4 c. cooked bulgar wheat
    2 cups chopped parsley
    1 can chickpeas, drained & rinsed
    1/2 c. diced raw jicama
    16 black olives
    1 clove garlic
    1/4 c. lemon juice
    2 Tbsp. olive oil


Mix all ingredients. Chill for an hour or so before serving, for flavors to mingle.
Makes 8 1-cup servings.
