Introduction

Ingredients

    1 lb pork tenderloin
    1 Tbsp olive oil
    Juice of 1 lime
    1 tsp cumin
    1 tsp coriander
    salt and pepper
    2 cloves garlic (cut each in half)

Directions

Preheat oven to 450 degrees F. Rub the tenderloin with lime juice and let sit a few minutes. Coat the tenderloin with olive oil, cumin, coriander and a little salt and pepper. Cut 4 slits along the top of the tenderloin and insert the halved garlic cloves. Cook on a rimmed cookie sheet until the pork reaches and internal temperature of 160 degrees F (approx 30 minutes).
