This SparkPeople recipe is great. I've made a few changes, like using brown rice instead of white rice. Also, I didn't think the original serving size was correct: this makes eight 1/2-cup servings. Ingredients

1 1/2 T. olive oil
1 c. finely chopped celery with leaves
1 1/4 c. finely chopped onion
1 c. water
1/2 c. orange juice
2 T. lemon juice
dash of hot sauce
1 c. brown rice
1/4 c. slivered almonds
1 cube or 1 tsp chicken bullion
2 T. orzo pasta
Directions
Makes eight 1/2-cup servings
1. Heat oil in a medium sauce pan on medium-high heat. Add celery and onion and saute until tender, about 10 minutes.
2. Add the orzo in the middle of the pan to toast.
3. Meanwhile, boil the cup of water in a tea kettle. When the kettle whistles, add the bullion to the cup of boiling water, and dissolve by stirring the water. Then, add the water and bullion to the sauce pan, along with the orange juice, lemon juice, and hot sauce. Bring to a boil.
4. Stir in the rice and bring back to a boil. Cover, reduce heat to low, and simmer for 45 minutes.
5. When rice is cooked, stir in almonds and serve.
