Introduction

Ingredients

Dry Ingredients
2.5 cups unbleached flour
1 cup granulated sugar
2 T. baking powder
Moist ingredients:
1 large egg
1 3/4 cups Kefir low fat plain pourable yogurt
1 cup chocolate chips
Directions
Pre-heat oven to 350 degrees.
Prepare large muffin tins by spraying with non-stick baking spray. Makes 8 Texas sized muffins.
Sift together the following dry ingredients: flour, sugar and baking powder. In a separte bowl wisk egg and low fat pourable yogurt together. Quickly add moist ingredients to dry ingredients and stir until just moistened. Stir in chocolate chips.
Pour batter into prepared Texas muffin tins. (greased or spray with non-stick cooking spray).
Bake in pre-heated 350 degree oven for 30 minutes or until tops are lightly browned and knife inserted into the center of a muffin comes out clean.
