Ingredients

One large can of tuna, in water
One medium red onion
1/2 a large bell pepper
One carrot
One scallion
Three celery stalks
1/2 can of cannelloni beans
Two tbsp. of sour cream
Directions
Drain one can of tuna, place in mixing bowl (6-cup tupperware works well) and sprinkle with lemon juice and set aside.
In a food processor, mince each vegetable EXCEPT the beans. Stir the minced vegetables in with the tuna.
Rinse 1/2 a can of cannellini beans and place in the food processor. Blend until it sounds funny- the beans under the blades will be pulverized, and the beans on top of the blades will be mostly intact. Add one tbsp. of sour cream in a time until you have a mixture the consistency of mayonnaise. Stir this into the tuna and vegetables, making sure that everything is mixed well.
This tastes best when chilled for a few minutes.
