Ingredients

    1 cup Bob's Red Mill Whole Wheat Pastry Flour
    1/2 tsp baking soda
    1 tsp baking powder
    1/2 tsp cinnamon

    1 egg white
    2 Tbsp unsweetened organic apple sauce
    2 tsp light brown sugar, packed
    1 cup milk, nonfat
    1 tsp vanilla extract
    1/4 cup ripe banana, mashed


Directions

Mix together dry ingredients in large bowl.
Whisk together wet ingredients in small bowl.
Make a well in the center of the large bowl, pour wet ingredients in the well.
Gently blend together both wet and dry ingredients into pancake batter.

Use cooking spray on frying pan over medium-high heat. Use 1/4 cup measure to get 6 pancakes. Cook 3 minutes on both sides or until ightly browned.

***Makes 6 large pancakes

    WOW these were beyond amazing! They were super fluffy like yous aid they would be...and the whole-wheat pastry flour prevented them from seeming too heavy. I can't believe my 6-year old ate 4 of them! The hint of bananas and vanilla makes it taste like banana bread! MMMM :) thank YOU! - 7/20/09

    These were really good, tasted like banana bread. I'll definitely be making these more often. I used the rest of the banana, sliced up and added to the batter just before cooking. Yummy. - 8/18/09

    These pancakes were moist and delicious. They have a flavor that reminds me of banana nut bread. I will certainly make them again. - 7/31/09
