Ingredients

1.5 cups baby spinach, roughly chopped
.5 cup cucumber with peel
.5 whole plum tomato
1 diced small scallion
4 slices lean smoked/cooked sandwich turkey meat
1 tbsp fresh cilantro/dill chopped
1 tsp tahini
1 lime
1 tsp olive oil
1 tsp balsamic or red wine vinegar
Directions
in a small bowl, combine oil, cilantro/dill, tahini, juice from lime and vinegar. Salt and pepper to taste.
wash and chop spinach, cucumber tomato, scallion and tomato, combine in layers in travel container. roll turkey slices up and chop. pull strands of turkey apart and spread over veggies. drizzle w/ dressing and enjoy at work, school or as a side w/ dinner.
