Ingredients

2 tbsp vegetable oil
1 onion
1 carrot
1 potato
1 pepper
1 celery stick
0.5 cup green beans
1 can of diced tomatoes
2 chicken bouillon cubes
borsh to taste
1 tbsp parsley
1 tbsp lovage
Directions
In a 4 quart pot, pour 2 tbsp oil. Grind the onion, carrot, potato, pepper, celery and green beans in the food processor and add them to the pot. Put a lid on and steam them untill they're soft.
Meanwhile, dilute the chicken cubes in 2 cups of water. Add that to the pot, along with 1 can of diced tomatoes. Complete with water untill the pot is almost full. Let it boil for 30 minutes. Add borsh, lemon juice OR vinegar. Salt to taste. Let it boil for 2 minutes and turn the stove off. Chop the parsley and lovage and add it to the pot. The lovage is a parsley like herb that gives it a unique taste. Since it's really hard to find, you can skip it or add more parsley. Enjoy!
