Introduction

Quick and easy noodle dish. Though I can't think of a name for it, it really is good. Quick and easy noodle dish. Though I can't think of a name for it, it really is good.
Number of Servings: 8

Ingredients

    Half a bag Ronzoni healthy harvest wheat egg noodles
    One large Tomato, medium diced
    3 cloves garlic, diced finely
    2 oz. toasted pine nuts
    2 oz. feta cheese-fat free
    3-4 oz. spinach-fresh
    2 oz. olive oil or extra virgin oliveoil

Directions

Place 2T Olive oil in pan over medium heat. Dice tomato and finely chop garlic. place in pan. Wash spinach and quick chop, add to pan. simmer over medium heat 7-10 minutes. Brown pine nuts and add to the mix. Boil noodles until desired tenderness. Toss all ingredients together. Add feta cheese last. Add some boneless skinless chicken breasts to make this a FULL meal. Enjoy.
