Ingredients

2/5 block of extra firm tofu
3 tbsp Trader Joe's Soyaki marinade
1 packet instant brown rice (approx 2 cups cooked)
.5 cup peas
.5 cup baby carrots, thinly sliced
.5 cup baby spinach
2 egg whites
2 tsp minced garlic
2 tbsp extra virgin olive oil
red pepper flakes, if desired
Directions
Cut the tofu into cubes and marinate them in 2 tbsp of Soyaki for at least 10 minutes, flipping/mixing them around frequently. While they marinade, this would be a good time to cook your rice.
Brown 1 tsp of the garlic in 1 tbsp of olive oil over medium-high heat. Add tofu. Brown the tofu on each side, remove from pan and set aside.
Lower heat to medium. To the pan, add the other tbsp of olive oil and the remaining 1 tsp of garlic. Add the two egg whites and red pepper flakes (if desired) and scramble. Add the carrots, peas, and spinach.
Once the spinach is wilted, add the rice and the remaining 1 tbsp of Soyaki. Add more red pepper flakes if desired. Cook until rice is at your desired level of done-ness or crunchiness.
Distribute into 3 equal servings (approximately 1.5 cups of rice mixture per serving) and top with tofu.
