Introduction

Summer tomatoes and fresh cold cucumbers with a hint of bacon flavor make this colorful black bean salad a must for your summer barbeque! Summer tomatoes and fresh cold cucumbers with a hint of bacon flavor make this colorful black bean salad a must for your summer barbeque!
Number of Servings: 5

Ingredients

    1/2 Cup Bushes Back Beans, drained and rinsed
    1 large cucumber, peeled and chopped
    3 medium ripe tomatoes, chopped
    8 green olives with pimento, cut into quarters
    2-3 strips cooked Morning Star Bacon, crumbled
    1/2 Red Onion lightly sauted
    1/4 cup your favorite Diet Italian or Balsamic Salad Dressing

Directions

Cook Morning Star Bacon (or regular bacon for non-vegetarians). Remove and cool. Cook red onion in the same pan until lightly sauteed, set aside and cool.
Add all other ingriedients and lightly toss. Stir in bacon and onion. Refrigerate 2 hours before serving (recomended.)
Makes approximatly 5 one cup servings.

    Black beans are so yummy, and with the fresh summer veggies - great! I use Kraft Light Done Right Italian Dressing - not fat free, but light in fat and calories and not sweet. - 8/4/09
