Ingredients

2 Cups Rice Flour
1/4 Soy Flour
1/2 teaspoon Xanthan Gum
1 TableSpoon Cinnimon
1/4 teaspoon salt
1/2 corn oil
1/2 cup sugar
2 eggs slightly beaten
3 med bananas, mashed
Directions
Pre Heat over to 350 degrees
Prepare 2 muffin trays (12 count) with either muffin cups or a light spray with Pam.
Mix Dry ingredients: rice flour, soy flour, xanthan gum, baking powder, and salt and set aside.
In large bowl mix corn oil, and sugar. blend until all the sugar is mixed in. Add slightly beaten eggs and mix some more. Mash bananas and then mix into sugar and oil mixture.
Add dry ingredients all at one time and make sure you do not mix too much. Do not use a mixer for this as it will not turn out correctly.
Put by spoonful into muffin tins.
Bake at 360 degrees for 20 Minutes
