Ingredients

    3-15.5 oz Cans Goya Black Beans
    2-14.5 oz Can Hunt's Diced Tomatoes
    1-16 oz Package Boneless Skinless Chicken Breast
    1-Cup Water
    1-Red Bell Pepper
    2-3-Jalapeno Peppers
    1-Vidalia Onion
    1.5 tsp.-Minced Garlic
    2 tsp.-Goya Adobo
    2 tsp.-Chili Powder
    1 tsp.-Ground Cumin
    1 tsp.-Black Pepper
    2 tbs.-Extra Virgin Olive Oil

Directions

Pre-heat oven to 350 degrees, season chicken with Adobo, Chili Powder and Ground Cumin and bake in covered casserole dish for 25 minutes then cut into bite size pieces and add to large sauce pan.
While the chicken is baking add Black Beans and Diced Tomatoes and 1 cup of water to large saucepan, add Adobo, Chili Powder, Ground Cumin and Black Pepper, set to simmer.
Dice Red Bell Pepper and Vidalia onion.
Sautee the onions, bell pepper, jalapenos and Garlic in olive oil then add to saucepan.
Simmer approx. 20 minutes then enjoy.
Makes approx. 10 - 1 cup servings.
