An excellent source of fibre, and low-fat carbs. May be served as burger on a bun, or as a meat substitute main dish. Ingredients

    2 15 oz cans black beans
    1 carrot, shredded medium size
    2 tbs. med. white or yellow onion, chopped
    1 clove fresh garlic, minced
    1/2 cup egg substitute
    1/2 cup saltine crackers, finely crushed
    1/4 tsp. cayenne pepper
    black pepper to taste

Directions

In a collander, wash beans well with cold water and allow to drain well. In medium non-stick skillet, saute carrot, onion and garlic in 2 Tbs. (+/-) water until onion is semi-soft. Remove from heat. In food processor, mash beans to a chunky texture. Do not over-process. In a bowl, combine beans, vegetables, egg substitute, cracker crumbs and seasonings. Form into 6 patties. Cook on medium heat in Pam coated non-stick skillet, browning for approx. 5 minutes per side. Serve like burger, or as a stand-alone main-course meat substitute.
