Ingredients

3-4 Pork chops
1-2 packs of Uncle Ben's 90 second rice (I like the Spanish Rice variety)
1 small can cream of mushroom soup
1-2 T Daisy light sour cream
1/2 - 1 cup shredded mozerella cheese
1 large can (about 2 cups) refried beans
1 package multi grain tortillas (10 cnt)
Directions
Preheat oven to 350 degrees.
Cook pork chops in a skillet. Blot off any excess grease. Cut into cubes.
Pour about 1/4 cup or so of the Enchilada sauce into a 9"x13" baking dish. Pour 1 package or rice on top of this making certain to spread out evenly.
Mix together in a small bowl the cream of mushroom soup and sour cream until blended.
On each of the tortillas, spread a little of the soup/sour cream mixture, 1-2 tsp of enchildada sauce, pork, and then top with about a Tbsp of beans. Roll up and place with seam side down into the prepared dish.
When all are filled, spread remaining sauce on top.
Bake for 30 minutes. Sprinkle cheese on top.
Return to oven for an additional 10 minutes or until chees is bubbly.
