Introduction

I developed this recipe for my son who is unable to eat sugar, honey, wheat gluten, and many other things. They are like brownies to him. For anyone struggling with sugar addictions, these cookies will satisfy your sweet and chocolate taste without bringing on an insulin reaction. Great for diabetics also. Ingredients

    One large egg
    4 T. Coca Chia (Optiona) (foodforlife.com) or you could sub. 2 t. flaxseed meal and 2 T. organic reduced fat coconut
    1 cup Old Fashioned Oats
    1/3 cup Gluten free baking mix (can substitute Whole Wheat flour)
    One large Banana mashed
    1/2 cup unsweetened applesauce
    3 T. Agave nectar
    4 T. Cocoa powder
    1/2 cup Natural peanut butter
    One serving of Protein powder (about 2 heaping tablespoons)
    1/3 cup of Grain Sweetened Chocolate chips
    1/2 tsp. baking soda
    1 tsp. vanilla extract
    5 packets of Truvia or other stevia based sweetner.
    1/2 cup unsweetened dried cranberries or organic raisons

Directions

Mashed banana, add agave nectar, egg, peanut butter, applesauce and mix thoroughly. Combine dry ingredients and add to the wet ingredients, then add vanilla. Spoon onto lightly oiled cookie pan and bake at 350 degrees in preheated oven for about 12 minutes. Don't overcook.

    Very Good
    Good to satisfy choc cravings! Didn't have stevia, so I substituted about a tablespoon of sugar -- so they weren't very sweet. I cooked one batch for the full 12 minutes and they came out very slightly burnt. Second batch at about 10.5 minutes was fine. I've checked the oven temp and it's accurate. - 6/21/09

    Thanks for the info. I'll adjust the time. It could've been my over. Also, if you don't have Truvia, you could use some extra Agave nectar or honey. It would just up the carbs and calories.
