Introduction

Ingredients

    1 small can diced tomatoes with juice
    4 firm ripe Roma tomatoes, diced
    1 medium onion, diced
    1 Serrano pepper or to taste
    1/2 cup chopped cilantro
    1/2 cup lime juice
    2 cloves minced garlic
    1 tsp salt
    1/8 tsp cayenne pepper
    1/4 tsp cumin
    2 tbsp Splenda


Directions

Mix all ingredients in a large bowl. Open and empty the can of diced tomatoes into the bowl. Add the diced Roma tomatoes, onions, and cilantro. Next, carefully slice open the Serrano pepper and remove the seeds. Finely mince the pepper, but try not to get any of the oils from the pepper or seeds on you skin, as it will burn. Add it to the bowl with the tomatoes and onions and add all the remaining ingredients. Mix gently and refrigerate for a couple of hours for the flavors to blend.

This should keep in the refrigerator for 7 to 10 days.
