Ingredients

1 medium yellow onion, diced
1 stalk celery, diced
2 medium carrots, diced
1 lb lean ground turkey
2 tbsp whole wheat flour
1 c. skim milk
1 28 oz. can crushed tomatoes
1 6 oz. can tomato paste
1 tsp Italian seasoning
2 tbsp fresh basil, minced
salt and pepper to taste
Directions
1. Heat a medium saucepot over medium high heat. Mist with cooking spray and add onions, carrots and celery. Saute 3-4 min. Add turkey and stir, breaking up meat into pieces with a spoon as it cooks, about 5 min.
2. Once turkey is cooked, add remaining 2 tbsp flour. Whisk in milk and stir until thickened
3. Pour in tomatoes, tomato paste, and 1/2 c. water. Reduce heat to medium low and stir. Add Italian seasoning and basil. Season with salt and pepper and cook for another 5 min.
4. Serve over whole wheat pasta or polenta, or as a pizza sauce.
