Introduction

Ingredients

2 T olive oil
2 cloves garlic, minced
2 carrots, chopped
4 ribs celery, chopped
1 c. chopped onion
1 c. dried lentils, prerinsed
1 potato, diced small
3 c. chicken broth
3-4 c. water
salt and pepper to taste
1 can tomato sauce
1 lb. lean ground turkey
1 T curry powder (add more or less to taste -- I needed quite a bit more because my curry was not very strong)
1 t. garlic powder
1/2 t. ginger
1/4 t. cinnamon
1/8 t. cloves
1/4 t. cayenne pepper (opt.)
Directions
Heat olive oil in large soup pot, then add all ingredients up to and including onion and saute for a few minutes. Then add ingredients up to and including tomato sauce. Bring to a boil, then reduce heat to low and simmer 50-60 minutes (or until lentils are tender).
In the mean time, brown ground turkey with the remaining spices. I also like to add more chopped onion as I brown the ground turkey, but if that's too much onion you can divide the onion in the soup base or just leave it out of the ground turkey. Once turkey is browned, add to soup and let simmer with everything else. Make sure you let it all simmer together for a while before you adjust the seasoning. Delicious!
