Introduction

Couldn't find kale at the grocery store, so I had it with a salad instead. Couldn't find kale at the grocery store, so I had it with a salad instead.

Ingredients

    4 3/4 cups water
    3 cups quinoa
    1 tbsp onion powder
    1 tsp garlic powder
    2 bay leaves
    2 green bell peppers, seeded and chopped
    1 tsp dried thyme
    1 tbsp rice vinegar
    1 big can kidney beans, rinsed and drained

Directions

Bring 4 cups water to boil. Rinse quinoa using a small sieve, add to water, and cover. Reduce heat to medium and cook for 25 minutes. While it is cooking, cut green peppers. Spray nonstick pan with Pam and cook for 5 minutes. Add thyme,beans, vinegar, and 1 cup water. Cook on low heat for 5 more minutes or until it begins to thicken.
Serve 1 cup cooked quinoa with 1 cup cooked green beans and peppers.
Makes 7 servings.
