Introduction

Being that I'm half Greek, I grew up eating tomato, cucumber, and feta salads. This is my version from my childhood memories. I sometimes sprinkle toasted pine nuts on top with some extra basil. Ingredients

    3 large cucumbers, peeled and seeded
    3 large tomatoes
    1 Vidalia onion, peeled
    1 can artichokes hearts, in water, drained
    1 can chick peas/garbanzo beans, rinsed and drained
    12 Kalamata olives, pitted and chopped
    1/2 cup crumbled feta
    2 cloves fresh garlic, pressed or finely chopped
    5 fresh basil leaves, torn or chopped
    1 lemon, juiced
    1.5 TBSP olive oil

    optional: salt and pepper to taste

Directions

In a large bowl combine cut up tomatoes, cucumbers, and onion. Add drained artichokes, drained chick peas, olives, feta, garlic, and basil. Squeeze the juice from the lemon over salad and drizzle with olive oil. Toss to combine.

Please note that I did NOT add salt to the recipe calculation.

Makes 6 1.5 cup servings
