Ingredients

    2 cups Heart Healthy BIsquick
    1/4 cup beet puree - approximately 70 grams
    1/2 cup applesauce
    1/2 cup milk
    2 eggs
    1/2 tsp cinnamon
    1 tsp vanilla extract

Directions

Mix all ingredients until well blended. You may need to add as much as 1/4 cup water to thin out the batter.

Pour 1/4 cupfuls onto HOT griddle that has been greased with cooking spray. Cook until edges are dry. Turn over and cook other side.

Makes 12 pancakes - each one is approximately 90 calories.

Great served with sugar-free syrup or applesauce and a light dusting of powdered sugar.
