Ingredients

    1 1/3 C. Oat Bran
    1/2 C. Ricotta Cheese - part skim
    20 oz. can pineapple in own juice
    1 TBS. cinnamon
    2 eggs
    1 tsp. vanilla
    1 tsp. baking soda
    1/2 C. unsweetened applesauce
    6-8 packages splenda

Directions

Mix all ingrediants except pineapple
Spray 8x8 baking dish with Pam
Lay pineapple down in the pan and pour mixture over pineapple.
Bake at 350 for 35 minues
Makes 9 servings - Cut three rows of three pieces each row
