Introduction

This is a non-traditional caprese salad that is OH SO GOOD. It's a great easy to prepare meal, side, or potluck dish!
The inspiration for this comes from www.smittenkitchen.com - she's the creative genius who came up with the idea. I took her recipe, changed a few things, and this is what I came up with.

Number of Servings: 3

Ingredients

    3 Roma tomatoes, cubed
    50 g Mozzarella cheese, low fat
    2 T Fresh basil, slivered
    .75 C Red kidney beans, rinsed and drained
    .5 T Olive oil, or to taste
    4 T Balsamic vinegar, or to taste
    Salt & pepper, to taste

Directions

Sliver the basil, cube the tomatoes.
Rinse and drain the kidney beans and mozzarella.
Combine all ingredients in a large enough bowl, add oil and vinegar.
Toss to coat.

This is even better the next day once it's marinated!
