Introduction

Ingredients

    2 medium potatoes, diced
    3 medium carrots, diced
    1 onion, diced
    1 head savoy or green cabbage, shredded
    3 slices lean smoked back bacon, diced
    5 cups thin vegetable stock/broth, preferably low sodium

Directions

Makes 4 large servings

In a deep saucepan, dry fry the bacon until the fat begins to run.

Add the diced potatoes, carrots and onions, cover with a lid and continue to fry for a further 10 minutes, stirring occasionally.

Add the shredded cabbage and stock and bring to the boil. Reduce heat and simmer for 10-15 minutes, until potatoes are cooked and the carrots are tender.

Serve hot with plenty of freshly cracked black pepper.
