Introduction

Ingredients

Marinade

1 tbsp Barbeque sauce - ETA brand (Australian) or any of your favourite bbq sauce.
1 tbsp ABC Sweet Soy Sauce (or just normal soy sauce if you don't have any)
Main Ingredients

30 g bean sprout
100g Sweet Potato
20 g Red Capsicum (Bell pepper)
160 g Extra Firm Tofu
40 g Zucchini
You may add in any other vegetable you like, just don't forget to add the extra calories.
Directions
Makes 2 servings.
First mix the wet ingredients (bbq + sweet soy sauce) in a bowl and add in a bit of water.
Then chop up your veggies + tofu (drain the tofu firstly between paper towel with a weight on top for 30 minutes). Add to the bowl and stir.
Put in your fridge for about 1 hour or you can cook it straight away like I do.
Set your oven to 180 degress and bake for 40-45 minutes.
Take out and serve in anyway you like, on its own, on a salad, in a wrap, the possibilities are endless.
