Ingredients

.75 cup canned black beans, drained
.75 Red Gold's crushed tomatoes
.25 tbs olive oil
1 jalapeno pepper
1 small onion
1 oz. shredded carrots
Salt-Free Garlic & Herb Seasoning, to taste
Directions
Makes 1 1&1/2 cup serving
1. Chop onion and jalapeno pepper.
2. Heat olive oil in small skillet over medium heat. Add in onion, jalapeno pepper, and shredded carrot and saute until onions are tender.
3. Meanwhile, pour black beans and crushed tomato into small saucepan. Simmer on low-medium heat. Add onion, jalapeno pepper and carrot.
4. Sprinkle in seasoning. Add more or less depending on your preference. Allow to simmer for about 10 minutes.
Serve with low-fat sour cream, shredded cheese or whatever you like to top black bean soup with. Enjoy!
