Introduction

This is an adult mashed potatoes. I fed it to the kids along with fresh green beans and some pork chops. My husband and I enjoyed it, but the kids weren't thrilled. Oh, well. I would have put another cheese, cream cheese, in it, but I didn't have any. It was still yummy. This is an adult mashed potatoes. Ingredients

    -1 lb. chopped red potatoes
    -1/2 C chopped/dice onions (I usually use white)
    -1 C Fat free chicken broth like Aldi's Fit & Active
    - 2 t minced garlic
    - salt and pepper to taste
    - 2 T Parmesan/Romano grated cheese
    - 1/4 C 2% Kraft cheese
    -1/2 oz Kryssos Co. Feta cheese

Directions

--Chop or dice the potatoes and onions. Put in a medium saucepan with the chicken broth and bring to a boil. Reduce to a simmer and cook until potatoes are tender.

--Cool slightly. Add the garlic. Puree in a food processor until desired consistency. Add salt and pepper to taste. Add cheese and stir well.

--Makes about 2 1/2 C or 5 servings of 1/2 C each.

    Wow, I am so sorry. I don't know how I missed that. It is in the nutrition. So, it's in there, I just forgot to bring it down to the recipe. It's 1/2 C chopped onions. I usually used white. Thanks for responding. --rumbamel
